Well, it's about time we had something new on this blog isn't it?  So sorry, trying to keep two up and going I seem to get tunnel vision.  Anyway, a really cool friend of mine gave me an awesome cd from Dynamic Catholic.  She had to pry it out of my hands to get it back - it was really that good, even after listening to it three times!


Consider this:  When 70% of Catholics don't go to Mass on Sunday, isn't it time to do something bold?  That's the mission of Dynamic Catholic in a nutshell.

The Glory of Motherhood


The most important person on earth is a mother. She cannot claim the honor of having built Notre Dame Cathedral. She need not. She has built something more magnificent than any cathedral -- a dwelling for an immortal soul, the tiny perfection of her baby's body.... The angels have not been blessed with such a grace. They cannot share in God's creative miracle to bring new saints to Heaven. Only a human mother can. Mothers are closer to God the Creator than any other human creature. God joins forces with mothers in performing this act of creation.... What on God's earth is more glorious than this: to be a mother.

I CHOOSE



We'd like to share this inspirational poem written by an amazing lady named Clara Morabito - when she was 86 years young!!!  She wrote this poem after seeing a presentation titled "I choose to be happy".  She has since shared it with many others, and it has been proudly displayed in her doctor's office, among other places.  At 88, Clara is indomitable as ever.  She notes that studies have shown a boost in the immune system when affirmations are used. She practices what she preaches - since composing this poem she has recited it several times a day, and enjoys excellent health!  We hope you will be uplifted and inspired by this beautiful poem:

Holy Week - Beautiful Stations of the Cross With Mary





There is a beautiful Stations of the Cross as seen through the eyes of Mary - then and now.  Creighton University offers it in a printable form and an audio version for free.  It is the most unique version I have seen - focusing on Jesus' solidarity with each of us as we undergo every type of  suffering and rejection on our journey through life.  I encourage you to pray it during Holy Week - it is moving, powerful and of course quite beautiful.

Meatless Fridays - Food for Lent



Cedar Planked Salmon

This is a simple, but yummy dish for Fridays (or any day).  You need to soak the plank (cedar, maple or alder are all good) at least an hour or two before you put it on the grill. You could soak it up to 12 hours if needed. 

In a small bowl, stir together the sea salt, black pepper, sweet paprika and cayenne pepper.  Place your salmon skin side down, and sprinkle liberally on top with the spice mixture.  Drizzle olive oil over top and refrigerate until you're ready to use it (up to 2 hours).

Fire up the grill on medium heat.  Be sure to have a spray bottle of water at the ready to extinguish any flare ups on the plank (don't panic, this happens usually several times during the cooking, but it's perfectly normal!)

Put the plank on the grill, close the lid, and heat it until the plank begins to smoke and crackle.  Place the salmon, skin side down on the plank.  Close the lid and grill about 20 minutes, or to your liking.  It will be completely cooked when it flakes with a fork. Transfer salmon to plates and drizzle with lime juice.  Serve immediately. Try it with the Pico de Gallo (recipe follows).

Cedar Planked Salmon
1 lb. salmon with skin (wild caught, not farmed), cut into three or four pieces
1 tsp. sea salt
1/8 tsp. freshly ground black pepper
1 1/2 tsp. sweet paprika
1/8 tsp. cayenne pepper
1 tablespoon extra virgin olive oil
1 lime, juiced

serves 3 or 4, depending how large you like your pieces of salmon



Pico De Gallo



This is a fresh salsa I've been making for years.  It's delish, and healthy to boot, especially since we'll be scooping it up with freshly baked tortilla chips!

Let's make up a batch, it's super easy.

Chop a pound or so of plum tomatoes into chunks about 1/2" size (tiny multi-colored heirloom cherry tomatoes would work well too, just cut them in half, quarters if they're large) . Then slide them into a large bowl.  Sometimes I've cheated and pulsed the tomatoes in the food processor if I'm lazy, but the texture doesn't turn out the same - so if you've got the time, chop them the old fashioned way.

Mince a clove of garlic and add it to the bowl.  Then add 1 finely chopped jalapeno pepper (no seeds!).  If you're  brave, you might try serrano peppers - they pack a wallop.  I'm a wuss, so I stick with jalapenos. Oh, be sure to wash your hands after touching the jalapenos (or wear the nitrile or non latex gloves to chop with).  Once I forgot and rubbed my eye - never made that mistake again - boy did that burn!

Chop up half of a large vidalia onion and add it (if you like more onion, throw the whole thing in). Grab a handful of cilantro and chop it (eyeball it - about a 1/2  cup), then add it to the bowl too.

Now grab some limes, roll them back and forth on the counter with the palm of your hand a few times (makes juicing easier and more productive), then squeeze the juice into the bowl.  Add sea salt to taste and sit aside to let those flavors marry a few minutes while you make the tortilla chips.  You'll notice I use a lot of lime - well, I like salsa that way.  But you can use as little or as much as you want - just add it to suit your taste.

Pico de Gallo:

1 1b. plum (aka Roma) tomatoes, or cherry heirloom tomatoes, chopped in half or quarters if large

1 clove garlic, minced

about 1/2 of a large vidalia onion, chopped

1 handful of cilantro, chopped

1 small jalapeno or serrano pepper, chopped - no seeds!

juice of 5 or 6 limes


Now, if you've got time, you can make some homemade baked tortilla chips in 20 minutes.  Oh what was I thinking, I got this backwards.   I should have said make the tortilla chips first, then whip up the pico de gallo while they bake.  Anyway, here's how:

Baked tortilla chips dusted with garlic, cumin and coriander

1 pkg. corn tortillas (if you can find them, use a combination of yellow, white and blue corn tortillas)

canola oil

sea salt

cumin 

garlic powder


Preheat oven to 375 degrees F.  Line two baking sheets with parchment paper (love that stuff).  Dip a pastry brush in canola oil and brush both sides of tortillas with it. Stack 6 tortillas on top of each other and using a pizza cutter or sharp knife, cut into six wedges.  Spread them out in a single layer on the cookie sheets.  Sprinkle a little cumin, garlic powder, and sea salt on top and pop 1 sheet at a time into the oven  (if you're blessed like me, you have double ovens so you can do both at once).  Bake for about 8 minutes on one side, flip them over with tongs, and bake an additional 8 minutes or until crisp and lightly golden. Let cool slightly and dig into that pico de gallo!  Enjoy!  These chips are best if eaten the same day they're made.

Catie's Wish

I heard the most inspiring and heart wrenching story on Seize the Day this morning.  There was a little girl named Catie who was diagnosed with a very rare form of pediatric cancer at age 7.  She lived to be 9, and during that time she had a few wishes to leave as a legacy - to eradicate pediatric cancer through prayer and research. These are my absolute favorite appetizers (sometimes I even have one or the other as a meal!).  We were blessed with the opportunity to travel to Italy a few years ago, and I have such fond memories of enjoying bruschetta and caprese salad with my family on the Piazzas in Venice and Florence. Eating these heavenly treats transports me right back...  I found that most Italian dishes are simple, but simply divine! Their secret is to use excellent olive oil, and the freshest ingredients so that all of the flavor shines through.  I hope you enjoy them!  Ciao.

Confession:  A Roman App.  The iPhone App for making confession easier.




It's all the buzz.  In case you haven't heard about this handy little app - it is the very first iPhone App to receive the Imprimatur.   It was developed by three men who are self-professed "Catholic Geeks", as an aid to Catholics who frequent the Sacrament of Confession, and for those who want to return to the Sacrament.  These men have come up with a way to connect with the youth, making the Church relevant and high tech, and they've taken the world by storm - even the secular world! 


The App is not a replacement for confession , but an aid to the examination of conscience in order to prepare for confession.  A valid confession can only be done one on one with a priest, who is acting in persona Christi, and has the authority to give us absolution for our sins. IT'S OFFICIAL! OUR LADY OF GOOD HELP - FIRST U.S. APPARITION OF THE BLESSED VIRGIN MARY APPROVED BY THE CHURCH



"I am the Queen of Heaven, who prays for the conversion of sinners, and I wish you to do the same."  This is how Our Lady introduced herself to Adele Brise in October of 1859, near Champion, Wisconsin.
"As they approached the hallowed spot, Adele could see the beautiful lady, clothed in dazzling white, with a yellow sash around her waist. Her dress fell to her feet in graceful folds. She had a crown of stars around her head, and her long, golden, wavy hair fell loosely around her shoulders. Such a heavenly light shone around her that Adele could hardly look back at her sweet face. Overcome by this heavenly light and the beauty of her amiable visitor, Adele fell on her knees.


'In God’s name, who are you and what do you want of me?’ asked Adele, as she had been directed.


“ ‘I am the Queen of Heaven, who prays for the conversion of sinners, and I wish you to do the same. You received Holy Communion this morning, and that is well. But you must do more. Make a general confession, and offer Communion for the conversion of sinners. If they do not convert and do penance, my Son will be obliged to punish them’


“ 'Adele, who is it?'' said one of the women. 'O why can't we see her as you do?' said another weeping.


“ ‘Kneel,’ said Adele, ‘the Lady says she is the Queen of Heaven.’ Our Blessed Lady turned, looked kindly at them, and said, ‘Blessed are they that believe without seeing. What are you doing here in idleness…while your companions are working in the vineyard of my Son?’


“ ‘What more can I do, dear Lady?’ said Adele, weeping.


“ ‘Gather the children in this wild country and teach them what they should know for salvation’


“ ‘But how shall I teach them who know so little myself?’ replied Adele.


“ ‘Teach them,’ replied her radiant visitor, ‘their catechism, how to sign themselves with the sign of the Cross, and how to approach the sacraments; that is what I wish you to do. Go and fear nothing. I will help you.’ 

Our Lady lifted her hands, as though beseeching a blessing for those at Her feet, and slowly vanished, leaving Adele overwhelmed and prostrate on the ground.  

When the news spread about Adele Brise’s vision of the Blessed Virgin, most people believed the account and were astonished. Some considered the event a demented delusion. Adele Brise, however, considered it a commission to catechize the children and admonish the sinners of the Bay Settlement. To honor the alleged apparition, Adele’s father erected a makeshift chapel near the spot of Adele’s vision.

On December 8, 2010, bishop David Lauren Ricken of the Diocese of Green Bay, made history when he formally approved this Marian Apparition:  


"It remains to me now, the Twelfth Bishop of the Diocese of Green Bay and the lowliest of the servants of Mary, to declare with moral certainty and in accord with norms of the Church:  that the events, apparitions and locutions given to Adele Brise in October of 1859 do exhibit the substance of supernatural character, and I do hereby approve these apparitions as worthy of belief (although not obligatory) by the Christian faithful." 
"I encourage the faithful to frequent this holy place as a place of solace and answered prayer."

For over 150 years, people have come to the Shrine of Our Lady of Good Help, seeking our Blessed Mother's intercession.  There have been many verbal and documented accounts of physical healings, conversions and answered prayers.  Just as at Lourdes, crutches and other mementos of physical healings are left at the Shrine in thanksgiving for answered prayer.  Learn more about the decree, Adele Brise and the Shrine below:

As Catholics, we believe that Jesus is truly Present in the Eucharist.  We have a savior who can't bear to be separated from us, and humbly comes to us in the form of bread and wine at each Mass (when the priest says the words of the consecration - This is my Body, This is my Blood). 


For many Christians (and sadly, perhaps some Catholics as well) this is difficult to believe.  And for non-Christians, it's probably almost impossible.  As St. Thomas Aquinas said: "To one who has faith, no explanation is necessary, to one without faith, no explanation is possible."  But Throughout history, Eucharistic miracles have occurred - perhaps because of heresies denying Jesus present (Body, Blood, Soul and Divinity) in the Eucharist, or for the benefit of some priests having doubts, for Catholics in general, or even those who have taken the Eucharist in order to desecrate it.



MIRACLES OF THE EUCHARIST
Oldest Recorded Eucharistic Miracle

Lanciano is a small, medieval town , along the coast of the Adriatic Sea. The name of the town means "THE LANCE".  According to tradition, Longinus, who thrust the Lance into the side of Jesus, striking Him in His Heart from which He shed blood and water, (Mk 15:29)) was from this town. 

In this city, around the year 700 A.D., a Basilian monk was celebrating the Mass.  He had been plagued with doubts about the Real Presence of Jesus in the Eucharist. As he began to say the words of the consecration (This is My Body, This is my Blood), he saw the host change into living flesh, and the wine change into live blood.  The Host, which still can be seen distinctly to this day, is the same size as the large host used in the Latin Church.  The blood, which coagulated into five globules, corresponds to the five wounds Christ suffered on the cross: those on his hands and feet, and the wound in the side from Longinus' spear.  The Holy Relics can still be seen to this day.

Five separate scientific studies have been performed on the relics.  Here are some of their findings:  The flesh was found to be human striated muscular tissue of the myocardium (the heart wall).  Though over 1250 years old, the flesh was found to be absolutely free of any agents used to preserve flesh.  The flesh is a cross section slice of a heart.  The myocardium, endocardium, vagus nerve and the left ventrical of the heart are all visible (a complete heart in its basic structure).  The blood globules are type AB (the same blood type found on the Shroud of Turin).  The percentage of people in Lanciano with AB blood type ranges from 0.5% to 1.0%.  In Palestine and the Middle East it is 14-15%.  Proteins found in the blood were found to be the same as proteins only found in fresh blood. These proteins are usually gone within 30 minutes, but here they are - present over 1250 years later.

The World Health Organization (WHO) appointed a scientific committee to verify these findings.  500 examinations were carried out over a period of 15 months.  The conclusions of all of the World Health researchers confirmed these findings.

A NEW YEAR, A NEW START...

Every year seems to begin with good intentions - we make resolutions with a sincere desire to fulfill them, but often they end up going by the wayside in our busy lifestyles.  Perhaps it's old habits we fall back into, we take on more than we can chew, or we don't arm ourselves with the resources to be successful and as a result give up the first time we fail - ouch!

Well, this year things are going to be different (oh, we've heard that before!).  Really - we've stumbled upon some great resources that will help, some suggestions for making every day Christmas, and finding your patron saint for the year!

CHRISTMAS ALL YEAR

Have you ever thought about giving something away every day of the year leading up to Christmas? These daily gifts could be called our "Christmas projects," one per day, every day till Christmas. Just think of the fun of being able to say "Merry Christmas" in July!
Here are a few suggestions:
Mend a quarrel. 
Seek out a forgotten friend. 
Write a long overdue love note. 
Hug someone tightly and whisper, "I love you so." 
Forgive an enemy. 
Be gentle and patient with an angry person. 
Gladden the heart of a child. 
Find the time to keep a promise. 
Make or bake something for someone else. Anonymously. 
Release a grudge. 
Listen. 
Speak kindly to a stranger. 
Enter into another's sorrow. 
Smile. 
Laugh a little. 
Laugh a little more. 
Take a walk with a friend. 
Lessen your demands on others. 
Play some beautiful music during the evening meal. 
Apologize if you were wrong. 
Turn off the television and talk. 
Treat someone to an ice-cream cone (yogurt would be fine). 
Do the dishes for the family. 
Pray for someone who helped you when you hurt. 
Fix breakfast on Saturday morning. 
Give a soft answer even though you feel strongly. 
Encourage an older person. 
Point out one thing you appreciate most about someone you work with or live near. 
Offer to babysit for a weary mother.

Let's make Christmas one long, extended gift of ourselves to others. Unselfishly. Without announcement. Or obligation. Or reservation. Or hypocrisy.
This is Christianity, isn't it?
When you give yourself, the gift never has to be returned.









Caprese Salad and Bruschetta - More Lenten Recipes

Bruschetta 


3 Heirloom Tomatoes, chopped and seeded (cherokee purple is my favorite, but ugly is another excellent brand available in most grocery stores)

2 Cloves Garlic, minced

1/4 cup fresh basil, leaves only, cut chiffonade (into thin strips)

Balsamic Vinegar - (use good quality please - in simple dishes like this, the flavor really stands out, and will make all the difference!)

Extra Virgin Olive Oil - (Cold Pressed - Italian preferably.  Again, use the best quality you can afford - in general the more expensive the olive oil, the more exquisite and fruity the flavor).

Sea salt (I actually use Blessed salt often for cooking and baking, but that's totally up to you, I figure it couldn't hurt!)

Baguette - regular or multi-grain

1 whole clove garlic, peeled

Prepare Crostini:


Preheat oven to 400 degrees F.  Line a cookie sheet with parchment paper.


Prepare the tomato mixture.  Remove seeds from tomatoes (easiest way to do this is to gently squeeze halves or quarters of tomatoes and they will release.)  Then chop into approximately 1/2" pieces.  Add to bowl.  Mince garlic and add.  Cut basil chiffonade - stack basil leaves on top of each other, then roll them up lengthwise, and chop into thin strips.  Or, you can just stack them and slice them thinly with kitchen shears.    Add to bowl.  Finally, add about 1 tablespoon of balsamic vinegar, drizzle with about 1 tablespoon on olive oil and add sea salt to taste. Fold gently to combine ingredients.  Sit aside and let flavors marry while you prepare crostini.


Cut baguette into 1/2 thick slices.  Place slices on prepared cookie sheet.  Drizzle with small amount of olive oil on each slice (or you can use a pastry brush to apply it).  Bake in oven 6-8 minutes, just until toasts are slightly golden and feel firm to the touch.  Remove from oven and immediately rub each slice with whole garlic clove.  

Spoon heaping tablespoonfuls of the tomato mixture on top of the crostini, place on a serving platter and enjoy!  

Note:  If you want to make this dish a little heartier, you can make bruschetta caprese -- by simply adding a thin slice of fresh mozzarella cheese (don't confuse this with regular mozzarella - fresh is usually found in the deli section, packed in water) to the toasts before you top them with the tomato mixture - delish!

8 oz. Fresh Mozzarella Cheese Balls (usually found in your deli, packed in water)

small bunch of fresh Basil Leaves

Balsamic Vinegar - again, being the stars of the show, use the best quality balsamic vinegar and olive oil you can find - it makes all the difference in the world!

Slice Tomatoes, then slice fresh mozarella into thin slices.  Slice basil chiffonade (see above recipe for tips).  On small salad plates, add tomatoes, alternating with fresh mozzarella slices in between, in a circular pattern.  Sprinkle fresh basil over top, add a splash of balsamic vinegar and drizzle of olive oil.  Top with salt and enjoy!

It is no accident that the date chosen for Pope John Paul II's Beatification coincides with Divine Mercy Sunday.  He had a deep devotion to Divine Mercy, and in August 2002, he entrusted the entire world to "Divine Mercy, to the unlimited trust in God's mercy."  From the very beginning of his pontificate, he spoke often in his homilies of the mercy of God.  What a gift he was, and still is to us - his joy and love of Jesus was contagious.  He showed us how to live and love like Jesus did; the value of suffering joined with Jesus as an opportunity for grace; and finally showed us how to face death with faith, not fear.  The Church celebrates the first Sunday after Easter as Divine Mercy Sunday.

St. Anthanasius' life struggle was against the Arian heresy, which denied the Divinity of Christ.  This champion of our faith suffered greatly for this, and in fact was exiled for 17 of his 46 years as Bishop.

St. James the apostle is the author of the Epistle that bears his name.  His mother Mary was a sister or close relative of the Blessed Virgin Mary, and according to Jewish custom, this is why he was sometimes referred to as the brother of the Lord.  St. Paul tells us he was a witness to the resurrection of Jesus, and a "pillar" of the Church. As a spiritual father, his writings were (and are) applicable to practical Christian living.  He was well aware of  the trials and  temptations Christians outside of Palestine faced living in the midst of Paganism.  Considering the culture we live in today, his writings are just as relevant, and offer valuable guidance.  He was the first Bishop of Jerusalem, and though the Jews nicknamed him "James the Just", he was martyred for the faith in the year 62.

Like the other apostles, Matthias was not chosen for what he was, but for what Jesus saw he could become.  Mother Angelica frankly and humorously tells it like it is:   “The apostles were dodos, dummies. That's why I'm here.

St. Simon Stock received an apparition of Our Lady on July 16, 1251, in Cambridge, England.  She appeared to him holding a brown Scapular in one hand, saying:  "Receive, my beloved son, this scapular of thy Order; it is the special sign of my favor, which I have obtained for thee and for thy children of Mount Carmel. He who dies clothed with this habit shall be preserved from eternal fire. St. Bernardine was called the second Paul by Pope Pius II.  He traveled on foot all across Italy, preaching about Jesus' Mercy and the love our Mother Mary has for all of her children.  He had a special devotion to the Most Holy Name of Jesus.
